Frog legs needs to be cooked in butter

Frog legs that are shallow fried in butter would go really well with the potato puree or even some garlic aioli. I would need more than a dozen of these for myself

  • 12 frog legs
  • 2 eggs
  • 150g flour
  • 150g bread crumbs
  • 400g butter
  • 400ml oil

Debone the frog legs and shape them into lollipops

Coat them in flour followed by eggs and bread crumbs

Heat up the butter and oil mixture to 180°C on a pan and shallow fry them until they become golden brown

Serve it with the potato puree or some form of aioli


Potato needs more butter

The secret to an exceptional mash potato is the amount of butter in it. This is what I learnt and used before and so far the best mash potato that i have tasted.

  • 500g potato
  • 150ml milk
  • 150ml cream
  • 250g butter
  • salt and pepper

Peel and cut the potatoes up into pieces

Steam the potatoes until they are soft and cooked through

Leave the cooked potatoes in the oven at 120°C for 10 minutes to dry it out a little

Rice the potatoes and pass them through a fine drum sieve

Mix the puree in a pan at low heat and slowly incorporate the cream and milk at room temperature

Slowly add the cubed butter into the puree while mixing until the whole puree emulsifies

Season with salt and pepper at the end
